Walnut Dip is one of Turkish Classic meze and you can spread on a piece of toast and wolf it or you can eat with piece of savoury biscuit. It is very simple to prepare and there is no cooking process with this recipe. Here is step by step how to prepare walnut dip.

Cevizli Ezme – Walnut Dip

Cevizli Ezme – Walnut Dip

One table spoon tomato paste, one table spoon pepper paste, handfull of walnut and two cloves of garlic.

Make ready, One tea spoon cumin, one tea sppon, red pepper, one tea spoon black pepper

Mix all the ingredients: walnut, stale bread pieces, pepper, red pepper, cumin, garlic in mixer until blend well.

How to make Cevizli Ezme – Walnut Dip

Add tomato and pepper paste in the mix and blend very well until get smooth paste.

Add one lemon juice and also 3 table spoon olive oil and mix well again.

Chicken Sote with Field Mushrooms ( Mantarli Tavuk Sote )

This is very easy and quick to cook chicken recipe. Try to use chicken thighs or chicken legs which is more tastier then chicken breast.

Before you start cooking, you should  be deboning the chicken legs or thighs and cut in 1 inch cubes so will be easy to cook as well.

Here is the step by step how to cook Chicken Sote with Field Mushrooms.

Chicken sote with field mushrooms

Cut 15 medium size mushroom in four quarters

Debone 4 chicken legs and cut in 1inches cubic size

Cut 3 medium size tomatoes, 2 onions, 2 red or green peppers, 3 cloves of garlic, 1 carrot in small pieces

Sote 8 minutes cubic chicken legs in 3 table spoon sunflower or virgin oil.

Then add carrots

Sote further 4 minutes, string time to time

Then add peppers and cook further 2 more minutes

Then add onions and mushrooms and cook further 3 minutes

Then add chopped tomatoes and cook further 10 minutes

Stir until tomatoes cooked throughly

Add some chopped parsley and salt and black pepper to taste. Here is the end result

Blackeye Bean Stew

This is very simple dish and cooked with 3 table spoon olive oil and totally healthy vegetarian dish all year round. Can be consumed warm and cold depends on your choice.

Here is the step by step cooking pictures.

Add three table spoon olive oil in a deep pan – Blackeye Bean Stew

Then add 1 chopped carrot and cook 4 minutes – Blackeye Bean Stew

Then add one medium size chopped onion – Blackeye Bean Stew

then add one chopped red pepper and two chopped cloves of garlic

Stir and cook all the vegetables 5 more minutes

Add in the pan 350 gr washed Black eye bean which soaked in the water 24 hours.

Add 2 ripe copped tomatoes in the vegetables

Add also 1 table spoon pepper paste to give colour into stew

Then add washed and soaked and rinsed blackeye beans

Stir and cook the beans until they get soft, approximately 30-40 minutes with low gas fire.

What a color , what a choice, what a harmony and aroma, I am talking about Food Markets. I loose myself , I can not decide where to look, what to take, like small spoilt children who is in toy shop and surrounded with lots of choice. I do love visiting food markets, people are so friendly and you can make conversation easily, they ask you what do you going to do with those pictures and back I ask them the name of the plants which I never seen before. Fascinating so interesting. Food is a bridge between people does not matter where you come from after 10 minutes they tell you their life stories or their anger with their politicians. My mum is natural cook. She never use measurement she just uses her instinct when she cooks. Must be many years practice. Cheese and spinach pastry is a classic one. You can change ingredients as you wish, like leek, potato, lentil, minced meat etc. These pastry will be cooked in oven 175 C and 35 minutes until pastry cooked on top and bottom. The pictures simply shows the order of the cooking, if you need any help just send me a message. You need filo pastry, 1 cup half and half milk and olive oil mixture, 1/2 kg spinach, red pepper, black pepper, 200 gr feta cheese, dill. Afiyet olsun

Haşhish ( Poppy Seed ) Pastry ( Hashasli Corek )

Authentic Turkish pastry cooked usually around Afyon city ( meaning also poppy seed city). This pastry made with poppy seed pastry and very very famous around Afyon where they grow poppy seed for pharmaceutical reason.
Serves 8
For the dough:
4 cups of real hard flavor
2 tea spoon yeast will be mixed with 1/2 cup of warm water
1 tea spoon salt
For the pastry:
1 cup toasted ground poppy seed paste mixed with 1/2 cup sun flower oil
150 gr ground walnut
2 teaspoon poppy seed and black cumin
