Lamb liver and kidney saute is very easy to prepare and also very tasty and cheap to make. All you need is:

1 medium onion chopped,

1 medium size peeled and  chopped carrot

2 cloves garlic, minced

2 bell peppers, chopped finely

1,5 tea spoon cumin

half a lemon juice

1 tea spoon red pepper

350 gr sliced lamb liver

350 gr sliced lamb kidney

400 gr chopped fresh tomatoes

1 table spoon tomato paste

250 gr mushroom

75 mililiter olive oil.

salt and pepper to taste.

End of October I found my tomatoes will never get ripe and red in green house so decided to pick them up and make some winter pickles. To make pickled green tomatoes, All you need is :

  • 2 liter sterilised jar,
  • 3 table spoon rock salt,
  • half a water glass red wine vinegar,
  • juice of half a lemon’
  • 10 cloves garlic,
  • handfull chickpeas,
  • 10 gr fresh dill,
  • 3 carrots chopped,
  • 50 gr fresh french beans,
  • 1,5 liter boiled water ( for the brine),
  • 1 tea spoon sugar.

Making Pickles (Recipe: Garlic-Dill Pickles)

Super easy pickled green tomatoes.

Pour the vinegar and lemon juice into a pan and add the sugar, salt. Heat on a medium temperature until the sugar has completely dissolved and then raise the temperature to boiling for 5 minutes.

Remove the pan from the heat and allow to cool completely.

Slice the garlic into slithers and chop the carrots into 20mm/1/4 ” rings.

Add handfull chickpeas on the bottom of the jar.

Pack a 2 litre sterilised jar with layers of the tomatoes, carrots, french beans and garlic.

Pour over the cooled vinegar mix and put dill on top of the jar pop on the lid.

Store in a cool dark cupboard and use within 2 months.

Once opened store in the fridge.

This cake is very moist and also has got sharp taste because of rhubarb inside. This cake is lovely if you served warm and with vanilia ice cream.

This recipe serves 10

400 gr rhubarb, thickly sliced

280 gr golden custer sugar

225 gr soft butter or margarin

finely grated rind and juice of 1 orange

225 gr self raising flour

100 gr ground almonds

1 tsb baking powder

3 medium eggs

handful flaked almonds and icing sugar for dusting

Cooking time; 1 hour or 1 hour 15 min

Cooking temp: fan oven 160C / convential 180C

Aegean side of Turkey is very popular with artichoke fields especially Urla and around and best artichoke comes from Yağcılar and Demircili Villages whıch is 5 miles south of Urla town. Here is very simple artichoke recipe which cooked in olive oil with potato and carrot. Artıichoke is very useful vegetable and Artichoke is one of the popular winter-season grown edible flower bud of the Mediterranean region known since ancient times for its medicinal and health benefiting qualities. Botanically it belongs within the thistle family of Asteraceae, of the genus; Cynara. Scientific name: Cyanara scolymus. Artichoke cleans the blood vessels and liver also throws toxic substances in body by urine. Here is step by step how to cook this very useful vegetable.

Add tw glass of water and juıce of one lemon ın a cooking pan

Homemade curry sauce from scratch is the easieast, healtiest and more tastier then those super market ready foods.

I highly recommend my customers to prepare the sauce in advance so taste intensifies and get better.

what you need to prepare the curry sauce:

1 medium chopped onion,

100 gr grated fresh ginger

50 ml sunflower oil tabe

2 tablespoon garam marsala

1 tablespoon turmeric

1 red or green very finely chopped chilli

400 gr can tomatoe

25 gr fresh coriender leaves

Blend the chopped onion and grated ginger together to make fine puree. Heat the sunflower oil in a wok until smoking.

Add the garam marsala, and cook for 30 seconds, then add the onion and ginger paste or puree, reduce the heat and cook slowly for 4 minute.

Then add the turmeric and fry for one more minute, then add the good quality can of tomatoe , pinch of salt and pepper and combine well.

You can keep this sauce in the fridge up to 4 days easily.

Curry ingredients: 250 gr skinless any white fish cut into large pieces.

200 gr skinless wild Alaskan salmon or Scottish salmon again cut into large pieces ( 2 cm x 2 cm )

400  gr cooked mixed sea food ( prawns, mussels, squid)

Bring the sauce to the boil, add the white fish and salmon pieces and cook for 5 minutes under moderate heat then add the mixed sea food and give it a good stir and cook 3 more minutes then remove from the heat

and leave for 3-4 minutes the sea food mixture will finish cooking in the heat from the sauce. Sprinkle chopped coriender leaves and serve with basmati rice.

Lumache Pasta Filling – Manti Ici

Manti ( Lumache type pasta )  is very tasty and easy to prepare if you have time. Filling the pasta shells takes time. 500 gr pasta needs at least 45 minutes filling time.

Pasta filling : 400 gr beef mince meat, 2 medium size onion chopped very finely, 100 gr flat leaf  parsley also chopped very finely.

Pasta sauce; 30 gr butter, 30 gr sun flower margarin, 1 tea spoon red pepper, 1 table spoon dried mint,  1 table spoon tomato paste, 1/2 table spoon pepper paste.

Mix all the pasta filling and season the mixture with salt and pepper. Combine all the ingredients in a bowl and mix with your hands for 10 minutes then take small pices of mixture and fill the pasta shells.

Pasta Topping: 300 gr Greek yoghurd mixed with 2 cloves of crushed garlic.

When the fillings done then add in a boiling water and cook for 15 minutes.

While pasta cooking, then prepare the sauce, mixing on a non stick pan: all the pasta sauce ingredients as described above and add little bit pasta juice to prevent getting the sauce very thick.

When pasta cooked then divide the pasta eating plates and first add on top of  one table spoon pasta sauce and then add one table spoon the garlick yoghurd.

Lentil, Spinach and Turkey Curry

Ingredients; 1 tbsp sunflower oil, 1 medium onion finely chopped, 2 cloves garlic finely chopped, 2 tbsp tikka masala paste, 1 tbsp madras curry paste, 400 gr chopped tomatoes, 100 gr red lentils, 250 gr washed and ready to eat spinach, bunch of fresh coriander, 4 tbspoon greek yogurt

Ingredients; 1 tbsp sunflower oil, 500 gr cubic chopped turkey pieces, 1 medium onion finely chopped, 2 cloves garlic finely chopped, 2cm root ginger, finely chopped, 2 tbsp tikka masala paste, 1 tbsp madras curry paste, 400 gr chopped tomatoes, 100 gr red lentils, 250 gr washed and ready to eat spinach, bunch of fresh coriander, 4 tbspoon greek yogurt.

Heat the oil in a large pan over medium high heat. Add the cubic turkey pieces and cook 10 minutes then add onion, garlic and ginger and cook further 3-5 minutes , stirring occasionally.

Add the curry pastes and splash little bit of water to prevent the spices burning. Tip in the tomotoes, lentils and 300 ml water and allow to simmer for 30 minutes.

Stir in washed and ready to cook spinach leaves , allowing one batch to wilt before adding the next handful batch.

Serve with the chopped fresh coriander and dollop of yogurt.
