Here is everyday vegetarien dish with a fair number of easy to find ingredients. Serve with flat bread and garlic Yoghurt.

You can prepare in advance and assemble when you ready then the rest is fairly easy.

This easily serves 6 to 8 people.

2 tablespoons ground coriender

2 teaspoon ground cumin

1/2 teaspoon cayenne pepper

1/2 teaspoon ground turmeric

4 tablespoon olive oil

1 medium size onion chopped

2 teaspoon finely grated fresh ginger

2 cloves of garlic, peeled and crushed

3 medium size chopped tomatoes

400 gr cooked chickpeas ( soaked overnight )

300 gr cauliflower chopped into pieces

300 gr chopped courgette

2 medium size potatoes cut into 2 cm dice size

10 gr fresh coriender

juice of 1 small lime

It is time to cook summer dish with courgette. Courgette is widely used vegetable in Turkish cooking. You can fried them, add in ratatouille or you can cook stuffed courgette as same way you cooking stuffed peppers.

We also do courgette dip with mayonnaise and walnuts . I will give this recipe coming weeks when my friends come to visit us to celebrate end of Ramadan on 18th of August. Here is step by step how to make courgette Frittata.

Courgette Frittata – Kabak Firinda

Grate three large courgette and sprinkle with salt and put in colander to get rid of excess water.

In a deep cup, beat three eggs with 1 table spoon flour, then add 1 tea spoon black pepper and red pepper and mix well.

Fry one large onion with one table spoon virgin olive oil

Get ready one tomato , 1 bunch of dill and couple of spring onion and cut them small pieces

Add chopped dill, spring onion in fried onions and mix well

Add two table spoon olive oil in oven proof dish and set a side

Then add grated courgette in oven proof dish

Then add spring onion, fried onion and dill mix onto grated courgette

Then add 150 gr Parmesan cheese or feta cheese in this mixture

Then add egg, flour and black pepper mix onto grated courgette and mix until all the ingredients mixed well.

Decorate top of the dish with sliced tomatoes and cook in the 170 C preheated oven for 30 minutes until golden colour achieved on top of the dish.

Serve courgette frittata with dollop of Greek yoghurd and crushed garlic.
