  • Kuru Fasulye; one of the most traditional Turkish dishes and eaten in every house hold once in week  in winter months with home made pickles or rice pilav or summer time with cacik which is chilled yoghurd with cucumber.

Turkish Bean Stew with Chicken Thighs, Onion, Peppers and Tomatoes – Tavuk Etli Kuru Fasulye,  almost everywhere in Turkey has their own varieties of  this stew, you can cook with beef mince meat or lamb and this Turkish dish is blessed with some particularly fine ones – hearty, tasty, and packed full of goodness.

Dried pulses like chickpeas, beans and lentils are a big part of Turkish cuisine and we eat these tasty pulses almost daily; they are delicious, nutritious and easy to prepare.  Beans, They are a great source of source of protein, vitamin B1 and dietary fiber.Here is step by step how to prepare this healthy dish in your home kitchen.

Turkish Bean Stew with Chicken Thighs, Onion, Peppers in rich Tomato Sauce – Tavuk Etli Kuru Fasulye

Serves 4

Preparation time: 15 minutes

400 gr Cannellini dried white beans ( soak the beans in cold water over night and cook 30 minutes next morning )

1 medium onion, finely chopped

1 green and 1 red bell pepper, finely chopped

Handful of parsley, coarsely chopped

15ml/1 tablespoon olive oil

350 gr chicken thighs (or cubic lamb or mince meat), cut in small chunks

400 gr can of chopped tomatoes

300ml/ 1 ¼ cups water

1/2 tablespoon red pepper and tomato paste (optional)

1 teaspoon sea salt flakes

1/2 teaspoon freshly ground black pepper

1 teaspoon red pepper flake

Soak beans overnight. Drain and boil in a large pan for around 30 minutes or until the beans are slightly soft.
After removing from heat, drain the beans and wash under cold water and set a side.
In a heavy cassorole pan, sauté the onion with the olive oil until soft. Add the chunky chicken meat and sauté for another minute or so. Stir in the green and red peppers, chopped tomatoes and the red pepper and tomato paste (if using) and mix well. Cover and simmer on low heat for 20 minutes. Then stir in the cooked beans and the water, mixing gently so that the beans won’t break. Season with salt, black pepper and red pepper flakes. Cover and cook in medium heat for. about 10 minutes. Serve with rice or bulgur pilaf  or pickles and some warm bread. Afiyet olsun.

Lumache Pasta Filling – Manti Ici

Manti ( Lumache type pasta )  is very tasty and easy to prepare if you have time. Filling the pasta shells takes time. 500 gr pasta needs at least 45 minutes filling time.

Pasta filling : 400 gr beef mince meat, 2 medium size onion chopped very finely, 100 gr flat leaf  parsley also chopped very finely.

Pasta sauce; 30 gr butter, 30 gr sun flower margarin, 1 tea spoon red pepper, 1 table spoon dried mint,  1 table spoon tomato paste, 1/2 table spoon pepper paste.

Mix all the pasta filling and season the mixture with salt and pepper. Combine all the ingredients in a bowl and mix with your hands for 10 minutes then take small pices of mixture and fill the pasta shells.

Pasta Topping: 300 gr Greek yoghurd mixed with 2 cloves of crushed garlic.

When the fillings done then add in a boiling water and cook for 15 minutes.

While pasta cooking, then prepare the sauce, mixing on a non stick pan: all the pasta sauce ingredients as described above and add little bit pasta juice to prevent getting the sauce very thick.

When pasta cooked then divide the pasta eating plates and first add on top of  one table spoon pasta sauce and then add one table spoon the garlick yoghurd.

Root Celeriac cooked with Turkey – Hindi Etli Kereviz Yemegi

This is one of my favourite winter recipe. It has got it taste from also egg yolk and lemon sauce which we add at the end of cooking process.

Very healthy dish, balancing turkey meat with potato, carrot and celeriac vegetable mixture.

Here is step by step how to cook root celeriac with fresh Turkey meat. You can cook this dish with lamb meat as well but I prefer turkey meat which is very lean and also light meat to eat.

Celeriac with Turkey meat – Hindi Etli Kereviz

500 gr cubic size cut turkey meat, 3 carrot, 200 gr potato cut cubic size, 1 medium onion, 2 garlic cloves, 750 gr celeriac root

Peel the outside of celeriac with knife and cut half

then cut each half of the celeriac to 2cm slices then cut each slices to 2 cm cubic pieces

Then add the celeriac pieces in a deep cup and fill with water to prevent celeriac changing its colour…

then cut all the ingredients 2 cm cubic pieces

Saute turkey meat in 2 table spoon sun flower and 1 table spoonolive oil mixture about 10 minutes until you get rid of the meat juice.

then add chopped onions and garlic and saute 1 more minute

then add carrot and potato pieces and saute 5 more minutes

Drain the celeriac pieces.

add celeriac in the cooking pan and saute further 2 more minutes with other vegetables

add one water glass chicken stock and close the lid and cook for 20 – 30 more minutes until cleriac pieces get softer.

Celeriac with Turkey – Etli Kereviz

For the sauce , have one egg yolk and half a lemon juice and one table spoon corn flour and mix them well in a deep cup.

Then add this mixture to celeriac dish and mix well.

Add some chopped parsley in celeriac dish and GOOD APPETITE

This is very simple dish and cooked with 3 table spoon olive oil and totally healthy vegetarian dish all year round. Can be consumed warm and cold depends on your choice.

Here is the step by step cooking pictures.

Add three table spoon olive oil in a deep pan – Blackeye Bean Stew

Then add 1 chopped carrot and cook 4 minutes – Blackeye Bean Stew

Then add one medium size chopped onion – Blackeye Bean Stew

then add one chopped red pepper and two chopped cloves of garlic

Stir and cook all the vegetables 5 more minutes

Add in the pan 350 gr washed Black eye bean which soaked in the water 24 hours.

Add 2 ripe copped tomatoes in the vegetables

Add also 1 table spoon pepper paste to give colour into stew

Then add washed and soaked and rinsed blackeye beans

Stir and cook the beans until they get soft, approximately 30-40 minutes with low gas fire.

Classic summer vegetarian dish, can be cooked with mince meat, diced lamb or chicken as well.

Cut cubic two medium size onion and cook in one table spoon butter until get softer

Add two table spoon olive oil

Cook onions in olive oil further 3 minutes

then add two chopped tomatoes

Add one green pepper as well and cook 5 more minutes

then add washed and clean 750 gr green beans

stir all the beans in tomato mix and combine well

Cook further 20 minutes or more until the beans are cooked, string time to time

The cooked beans colour should be same like in the picture

You can eat warm or cold, it is a summer dish

Split Aubergine with minced meat Filling ( Karniyarik )

Karniyarik ( eggplants with minced meat filling ) is very popular summer dish when the aubergines are ripe and tasty.

You need 6 or 8 long aubergines, 300 gr minced meat, 6 medium size ripe tomatoes, 2 medium onions, 8 garlic cloves cut small pieces, 1 bunch of parsley, 2 red pepper cut vertically 8 pieces, 1/2 cup sunflower oil to fry aubergines. Karniyarik – Split Aubergine with mince meat filling

Karniyarik

Add black pepper 1 tea spoon

Stir all tomato, mince meat, tomato and onion, black pepper, parsley mixture for 5 minutes

cooked filling

Fill the aubergines with meat mixture

Place aubergines in a oven proof dish

Add one piece of red pepper on top of the each aubergine filling

Add 1 cup of water in dish before you put in the oven

Bake in the 200 C oven for 35 minutes
