Firinda Köfte Patates (Baked Meatballs Potato)
Ingredients:
3 medium potatoes, peeled, quartered
1 medium onions, finely chopped
2 cloves garlic, crushed
3 tomatoes, chopped
1 tsp tomato paste and pepper paste
3 cups water
2 large red bell peppers
Salt and pepper to taste
2 tbsp olive oil
Meatball Ingredients:
500 gr mince beef
1 small onion, finely chopped
1/2 cups of bread crumbs or slice of steal bread chopped finely in food processor.
25 gr chopped parsley 1 tea spoon ground cumin and coriander 1 medium size egg
Salt and pepper to taste
Cooking Directions:
To prepare meatballs. In a large bowl, combine all the meatball ingredients. Work gently with hands until mixture holds together. Divide mixture into 16 portions. Shaped into flat balls/or fingers.
Preheat oven 350F/180C.
Get a frying pan and fry potatoes slightly first; then set a side.
then fry all the meat balls 2 minutes and set a side.
then put all the potatoes in the bottom of the oven tray then lay all the meat balls over potatoes then place the papers between them and then your sliced tomatoes.
another pan make a rich tomato sauce with a tablespoon olive oil, chopped garlic, oregano, red pepper flakes, tablespoon tomato paste and peppers paste, cooked them well with a glass of water then pour the sauce over meatballs
cook it for 45 mins until potatoes are done.
serve with vermicelli rice.
