This is very tasty dish and most part of the cooking can be done in advance and then finally finished in oven.

Cauliflower goes very well with bechamel sauce. Chicken saute gives rich flavour to cauliflower.

1 small cauliflower
2 medium size tomatoes
500 gr chicken tighs,
1 red pepper
1 table spoon pepper paste
For the bechamel sauce:
1 table spoon flour
30 gr butter
2 glass of water
- Melt 30gr butter in a saucepan. Stir in a table spoon of flour and cook the mixture for just under a minute – known as a roux.
- Stir in milk, a little at a time, making sure to stir well so that no lumps form. Bring the mixture to the boil, stirring constantly, so that the mixture thickens and becomes glossy. Boil for a couple of mins.
- To make a cheese sauce, add grated mild cheddar cheese off the heat. Season well.
Cook the cauliflower florets in boiling water for 10 minutes adding little bit salt. Then add the cooked florets in baking dish.
Cut the chicken in small pieces then saute in one table spoon olive oil with chopped onions for couple of minutes then add the chopped peppers and tomatoes and cook further 10 more minutes until you get rid of the juice. Then add the pepper paste and salt and cook on more minute. Arrange the chicken saute on top of the semi cooked cauliflower in baking dish, then pour over bechamel sauce and cook in the oven 200C/fan 180C/gas 6 for 20 mins.
