Aubergine (Eggplant) Dish – Patlican Kavurma
Here is the ingredients: 4 medium size aubergine, 3 tomatoes, 3 garlic cloves, one hot and one red pepper, one onion.
Cut the aubergines 1 cm cubic size and put into salty water and keep it in there for ten minutes.
Cook the chopped onion and garlic in 4 table spoonful olive oil until they get pink colour.
Add the chopped hot and red pepper in onion mix and cook further 3 minutes.
Drain the aubergines from salty water and add in the cooking pan on top of the onion and peppers.
Cook another 15 minutes mixing up and down the aubergines until they change colour.
Cut the tomatoes roughly
Add the chopped tomatoes on top of the aubergine mix in cooking pan and mix well.
Cook everything further 30 minutes until all the juice absorbed and aubergines are cooked in tomatoes.
