This recipe  is a Turkish classic, the smell of the peppers ad aroma of mint comes like a waves and reminds me summer time,  I can easily follow the smell and certain smeone is cooking stuffed peppers.

Serves 4

300 gr minced beef meat

100 gr rice

1 chopped medium size onion

50 gr fresh parsley

50 gr fresh dill

50 gr fresh mint or 10 gr dry mint

1 tea spoon black pepper

1 tea spoon cumin

1 tea spoon red pepper

1 tea spoon oregano

2 tbsp olive oil

1 tbsp full tomato and pepper paste


1. Mix all the ingredients in a bowl with your hands, make sure they all combine  very well well. 

2. Then fill all the peppers and courgette with this mixture, but  do not fill up to neck, they will expand once they cooked.

3. Then line all the peppers and courgettes in a big oven proof dish and add 1 cup of cold water.

4. Cook the stuuffed peppers covered for 1 hour on slow  gas cook.

5. Serve hot with dollop of garlick yoghurt.
